Ingredients

26 oz frozen French fries

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups whole milk

½ teaspoon salt

¼ teaspoon ground white pepper

2 teaspoons ranch seasoning powder

½ teaspoon cayenne powder, divided

8 oz white cheddar cheese, shredded

Instructions

Preheat: Preheat oven or air fryer to 400°F (205°C).

Bake the fries: Arrange fries in a single layer on a baking sheet or in an air fryer basket. Cook until crisp and golden per package directions.

Make the roux: In a medium saucepan over medium heat, melt butter. Whisk in flour and cook 2 minutes, stirring constantly.

Build the sauce: Slowly whisk in milk. Add salt, white pepper, ranch seasoning, and half the cayenne. Reduce heat to medium-low and cook, whisking, about 5 minutes until thickened.

Melt in cheese: Stir in shredded white cheddar until fully melted and smooth.

Assemble: Pour hot cheese sauce over the fries. Sprinkle with remaining cayenne and serve immediately.

Extra crispy fries: Spread fries out—crowding makes them soft.

Keep sauce smooth: Use freshly shredded cheese (pre-shredded can make sauce grainy).

Heat control: Use less cayenne for mild, or add more for extra “voodoo” bite.
