Ingredients

  • For the meatloaf:
  • 1 1/2 lbs ground beef (or a mix of beef and pork)
  • 1 egg
  • 3/4 cup bread crumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup milk
  • 1 tbsp Worcestershire sauce
  • 1/4 cup ketchup
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For the mashed potato topping:
  • 2 lbs potatoes, peeled and cubed
  • 3 tbsp butter
  • 1/2 cup sour cream
  • 1/4 cup milk or cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • For garnish:
  • 4 slices cooked bacon, crumbled
  • 2 green onions or chives, chopped
  • Extra shredded cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a loaf pan or baking dish.
  2. In a large bowl, mix ground meat, egg, bread crumbs, onion, garlic, milk, Worcestershire sauce, ketchup, salt, and pepper until just combined.
  3. Press the mixture into the prepared pan and bake for 35–40 minutes until nearly cooked through.
  4. Meanwhile, boil potatoes until fork-tender. Drain and mash with butter, sour cream, milk, cheese, salt, and pepper.
  5. Remove meatloaf from oven. Spread mashed potatoes evenly on top and sprinkle with extra cheese if desired.
  6. Return to oven and bake for another 10–15 minutes until cheese is melted and bubbly.
  7. Top with crumbled bacon and green onions before serving.

Notes

  • Add cooked broccoli or caramelized onions to mashed potatoes for extra flavor.
  • Use ground turkey or chicken for a lighter version.
  • Wrap meatloaf in bacon before baking for added richness.
