Juicy seared beef cubes tossed in a bright lemon butter sauce and served with cool, creamy garlic ranch. A fast, flavorful 30-minute dinner.
1 lb beef cubes
2 tbsp olive oil
3 tbsp unsalted butter
3 cloves garlic, minced
Juice of 1 lemon
Zest of 1 lemon
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
For Creamy Garlic Ranch:
1/2 cup ranch dressing
1/4 cup sour cream
Garnish:
1 tbsp fresh parsley, chopped
Prep Beef: Pat beef cubes dry with paper towels. Season with salt, pepper, and thyme.
Sear Beef: Heat olive oil in a skillet over medium-high heat. Sear beef in a single layer, 4–5 minutes per side until browned. Remove and set aside.
Make Lemon Butter Sauce: In the same skillet over medium heat, melt butter. Add garlic and sauté 1 minute.
Add Lemon: Stir in lemon juice and zest; simmer 1–2 minutes.
Return Beef: Add seared beef cubes back to the pan, tossing in the sauce. Cook 2–3 more minutes until warmed through.
Make Garlic Ranch Dip: In a small bowl, stir together ranch dressing and sour cream until smooth.
Serve: Plate beef with drizzled lemon butter sauce, garnish with parsley, and serve with garlic ranch on the side.
For extra richness, use heavy cream instead of sour cream in the dip.
Great with roasted potatoes, steamed broccoli, or a crisp side salad.
Can be made with steak tips or sirloin for even more tenderness.
