Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1/2 cup plain yogurt or sour cream
  • 1/4 cup milk (any kind)
  • 1/2 cup vegetable oil or melted butter
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. In another bowl, whisk eggs, yogurt, milk, oil, lemon juice, zest, and vanilla until smooth.
  4. Pour wet ingredients into dry and stir gently until just combined—do not overmix.
  5. Fold in blueberries.
  6. Pour batter into prepared pan, smooth top, and bake for 50–60 minutes until a skewer comes out with moist crumbs.
  7. Cool in pan for 10 minutes, then lift out and cool completely on a wire rack.
