Ingredients

  • 2 tablespoons active dry yeast
  • 1/4 cup warm water (105°F to 115°F)
  • 1 1/2 cups lukewarm milk
  • 1/2 cup granulated sugar
  • 1 teaspoon salt
  • 2 large eggs
  • 1/3 cup shortening or unsalted butter, softened
  • 5 cups all-purpose flour (plus more for dusting)
  • Oil for frying (canola or vegetable)
  • For the glaze:
  • 1/3 cup butter
  • 2 cups powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/3 cup hot water

Instructions

  1. Dissolve the yeast in warm water and let it sit for 5–10 minutes until foamy.
  2. In a large bowl, combine milk, sugar, salt, eggs, and shortening. Stir in the yeast mixture.
  3. Gradually add flour until a soft dough forms. Knead for 5–8 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise for 1 to 1.5 hours until doubled in size.
  5. Roll out dough to 1/2 inch thickness and cut out doughnut shapes. Let rise for 30–45 minutes until puffy.
  6. Heat oil to 350°F (175°C) and fry doughnuts for 1 minute per side until golden brown. Drain on paper towels.
  7. For the glaze, melt butter and mix with powdered sugar and vanilla. Gradually add hot water until smooth.
  8. Dip warm doughnuts into glaze, let excess drip off, and place on a rack to set.

Notes

  • Use a thermometer to maintain proper oil temperature for even frying.
  • Don’t overcrowd the fryer—work in batches.
  • Dough can be made ahead and chilled after first rise.
  • Best enjoyed the same day but can be reheated briefly in the microwave.
