Ingredients

  • 3 large eggs

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate egg yolks and whites into two bowls.
  3. Whisk cream cheese (or yogurt) into the yolks until smooth and slightly fluffy.
  4. Add cream of tartar to the egg whites and beat until stiff peaks form.
  5. Gently fold the egg whites into the yolk mixture in batches, maintaining volume.
  6. Spoon or pipe 3–4 inch rounds of batter onto the prepared tray.
  7. Bake for 25–30 minutes until lightly golden and firm.
  8. Turn off oven, crack door, and let rounds dry for 10 minutes to enhance texture.
  9. Cool completely on a wire rack before using.
