This hearty John Wayne Casserole is layered with taco-seasoned beef, creamy sour cream, veggies, and cheddar on a biscuit crust—perfect for an easy, flavorful dinner.
For the Taco Meat:
1 pound ground beef
1 packet taco seasoning
3/4 cup water
For the Casserole:
1 (16.3 oz) can refrigerated biscuit dough
1 cup sour cream
1/2 cup mayonnaise
1 cup shredded cheddar cheese (divided)
1 small onion, chopped
1 bell pepper, chopped
1 (4 oz) can diced green chiles
2 tomatoes, chopped
Salt and pepper to taste
Nonstick cooking spray
Preheat Oven & Prepare Dish: Preheat to 350°F (175°C). Lightly grease a 9×13-inch baking dish with nonstick spray.
Cook Taco Meat: In a skillet over medium heat, cook ground beef until browned. Drain excess fat, then add taco seasoning and water. Simmer for 5 minutes, then set aside.
Prepare Crust: Press biscuit dough into the bottom of the baking dish to form an even crust. Bake for 10 minutes, then remove from oven.
Mix Cream Layer: In a bowl, combine sour cream, mayonnaise, chopped onion, and half of the cheddar cheese. Spread this mixture over the pre-baked crust.
Layer Casserole: Add the cooked taco meat over the cream mixture. Then layer with chopped bell pepper, green chiles, and tomatoes. Top with remaining cheddar cheese.
Bake: Return to oven and bake for 25–30 minutes, until cheese is melted and bubbly.
Serve: Let sit for 5 minutes before slicing. Serve hot, optionally with salsa, guacamole, or fresh cilantro.
Substitute ground turkey or plant-based crumbles for a lighter or vegetarian version.
Add chopped jalapeños or hot sauce for more heat.
