Ingredients

  • 1 lb Italian sausage (mild or spicy, based on preference)
  • 12 oz spaghetti
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 jar (24 oz) marinara sauce
  • 3 cups fresh spinach, chopped
  • Salt and pepper to taste
  • 1 teaspoon dried oregano (optional)
  • ½ teaspoon red pepper flakes (optional, for extra heat)
  • ½ cup grated Parmesan cheese (optional, for garnish)

Instructions

  1. Cook the spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions, about 9-10 minutes for al dente. Drain the pasta, reserving ½ cup of pasta water. Set aside.
  2. Cook the sausage: Heat the olive oil in a large skillet over medium heat. Add the Italian sausage and cook, breaking it apart with a spoon, for 7-8 minutes or until browned and fully cooked. Drain any excess fat.
  3. Add garlic and marinara sauce: Stir in the minced garlic and cook for 1-2 minutes. Add the marinara sauce to the skillet and simmer for 5-7 minutes, letting the flavors meld together.
  4. Add spinach: Stir in the chopped spinach and cook for 2-3 minutes, or until the spinach wilts. Season with salt, pepper, and oregano (if using), and add red pepper flakes if you want extra heat.
  5. Combine with spaghetti: Add the cooked spaghetti to the skillet and toss everything together. Add a splash of the reserved pasta water to adjust the sauce consistency, if needed.
  6. Serve: Plate the pasta and top with grated Parmesan cheese, if desired. Serve hot with your favorite side dish.

Notes

  • Try using turkey or chicken sausage for a leaner option.
  • Feel free to add extra vegetables like mushrooms, bell peppers, or zucchini to the sauce.
  • For a gluten-free version, substitute the pasta with gluten-free spaghetti.
  • Leftovers can be stored in the fridge for up to 3 days. Reheat with extra sauce or pasta water.
