Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 large ripe bananas, mashed
  • 1 cup crushed pineapple (with juice)
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
  3. Stir in mashed bananas, crushed pineapple with juice, eggs, oil, and vanilla until just combined.
  4. Fold in chopped nuts, if using.
  5. Pour batter into prepared pan and spread evenly.
  6. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
