Ingredients

  • 2 cups all‑purpose flour
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 2 ripe bananas, mashed (about 1 cup)
  • 1 cup crushed pineapple with juice, lightly drained
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)
  • For the frosting:
  • 4 oz cream cheese, softened
  • 2 Tbsp unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350 °F (175 °C). Grease or line a 9×5‑inch loaf pan.
  2. In a bowl, whisk together flour, granulated sugar, brown sugar, baking soda, salt, and cinnamon.
  3. In another bowl, combine mashed bananas, crushed pineapple (with some juice), eggs, oil, and vanilla extract.
  4. Stir the wet ingredients into the dry until just combined. Fold in nuts if using.
  5. Pour batter into the prepared pan and smooth the top.
  6. Bake 55–65 minutes, or until a toothpick inserted into the center comes out clean. Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  7. Meanwhile, make the frosting: beat together cream cheese and butter until smooth. Add powdered sugar, cinnamon, vanilla, and salt, and beat until fluffy.
  8. Once the bread is completely cool, spread the frosting generously on top and optionally sprinkle with extra cinnamon or chopped nuts.
