Ingredients

  • 1/2 cup walnut halves
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 lb large shrimp, peeled and deveined
  • 2 egg whites
  • 1/2 cup cornstarch
  • 1/4 tsp salt
  • Oil for frying
  • For the honey sauce:
  • 1/4 cup mayonnaise
  • 2 tbsp honey
  • 1 tbsp sweetened condensed milk
  • 1 tsp lemon juice (optional)
  • Optional garnish:
  • Chopped green onions
  • Sesame seeds
  • Extra candied walnuts

Instructions

  1. In a small saucepan, combine sugar and water and bring to a boil. Add walnut halves and simmer for 2–3 minutes. Remove and let dry on parchment paper.
  2. In a bowl, beat egg whites until foamy. Add shrimp and toss to coat.
  3. Mix cornstarch with salt in a separate bowl. Dredge each shrimp in the cornstarch mixture.
  4. Heat oil to 350°F (175°C) in a pan or fryer. Fry shrimp in batches for 2–3 minutes per side until golden and crispy. Drain on paper towels.
  5. In a bowl, whisk together mayonnaise, honey, sweetened condensed milk, and lemon juice if using.
  6. Toss fried shrimp in the sauce until evenly coated.
  7. Top with candied walnuts and garnish with green onions or sesame seeds if desired.

Notes

  • Add lemon juice or rice vinegar to the sauce to cut sweetness.
  • Air fry or bake shrimp for a lighter version.
  • Swap walnuts for pecans or almonds if needed.
  • Store sauce and shrimp separately to retain crispiness.
  • Reheat shrimp in oven or air fryer, not microwave.
