Ingredients

  • 23 crispy chicken tenders (store-bought or homemade)
  • 4 cups mixed greens or romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup shredded carrots
  • 1/4 cup crumbled blue cheese or feta (optional)
  • 2 tablespoons honey
  • 2 tablespoons hot sauce (like Frank’s RedHot)
  • 1 tablespoon olive oil or melted butter
  • Salt and pepper to taste
  • Optional: ranch or blue cheese dressing

Instructions

  1. Cook the chicken tenders according to package directions or until golden and crispy. Slice into strips.
  2. In a small bowl, whisk together honey, hot sauce, and olive oil or butter to create the honey hot sauce.
  3. In a large bowl, toss greens, tomatoes, cucumber, red onion, and carrots. Drizzle with a little olive oil or dressing and toss to coat.
  4. Top the salad with warm chicken strips. Spoon the honey hot sauce over the chicken and salad as desired.
