Ingredients

Shortcake Base:

1½ cups all-purpose flour

¼ cup granulated sugar

2 teaspoons baking powder

¼ teaspoon salt

6 tablespoons cold unsalted butter, cubed

½ cup whole milk

1 teaspoon vanilla extract

Cheesecake Filling:

3 (8 oz) blocks cream cheese, softened

1 cup granulated sugar

3 large eggs, room temperature

1 cup sour cream

1 tablespoon lemon juice

1 tablespoon vanilla extract

Strawberry Topping:

3 cups fresh strawberries, diced

½ cup granulated sugar

2 tablespoons cornstarch

¼ cup water

1 teaspoon lemon juice

Whipped Cream (Optional):

1 cup heavy whipping cream

¼ cup powdered sugar

1 teaspoon vanilla extract

Instructions

1. Make the Shortcake Base

Preheat oven to 350°F (175°C).

In a bowl, mix flour, sugar, baking powder, and salt.

Cut in cold butter until the mixture is crumbly.

Stir in milk and vanilla until dough forms.

Press dough into a greased 9-inch springform pan.

Bake for 12–14 minutes. Let cool completely.

2. Prepare the Cheesecake Filling

Beat softened cream cheese until smooth.

Add sugar and beat until combined.

Mix in eggs one at a time.

Stir in sour cream, lemon juice, and vanilla.

Pour cheesecake mixture over cooled shortcake base.

3. Bake the Cheesecake

Reduce oven temperature to 325°F (160°C).

Bake 55–65 minutes until the center is slightly jiggly.

Turn off oven, crack the door, and cool for 1 hour.

Refrigerate at least 4 hours or overnight.

4. Make the Strawberry Topping

In a saucepan over medium heat, combine strawberries, sugar, cornstarch, water, and lemon juice.

Cook for 5–7 minutes, stirring until thickened.

Cool completely, then spoon over chilled cheesecake.

5. Add Whipped Cream (Optional)

Beat heavy cream, powdered sugar, and vanilla until fluffy.

Pipe or dollop whipped cream around the edge for a decorative touch.

Notes

Garnish with whole strawberries for extra flair.

For clean slices, use a hot, dry knife when cutting.

Best served chilled and stored in the refrigerator.

Freeze slices (without topping) for up to 2 months.
