Ingredients

  • 1 lb ground beef
  • 8 oz elbow macaroni or pasta of choice
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup milk
  • 1/2 cup tomato paste or 1 can diced tomatoes
  • 1 1/2 cups shredded cheddar cheese
  • 1 tbsp olive oil or butter
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning or dried herbs
  • Optional: 1 cup frozen peas, corn, or diced bell peppers

Instructions

  1. In a large skillet, brown ground beef with diced onion and minced garlic until beef is cooked through and onions are softened.
  2. Drain excess fat if needed.
  3. Stir in tomato paste or diced tomatoes, beef broth, and milk.
  4. Add uncooked pasta and season with salt, pepper, and Italian seasoning.
  5. Bring mixture to a simmer, cover, and cook until pasta is tender and sauce thickens, about 12–15 minutes, stirring occasionally.
  6. Stir in shredded cheddar cheese until melted and creamy.
  7. If using, add frozen peas or other veggies toward the end of cooking and cook until heated through.
