Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into chunks
  • 2 cups pineapple chunks (fresh or canned, drained)
  • 1 red bell pepper, cut into chunks
  • 1 yellow or green bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice
  • 2 tbsp brown sugar or honey
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger or 1/2 tsp ground ginger
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Wooden or metal skewers

Instructions

  1. Cut chicken into bite-sized chunks and set aside.
  2. In a bowl, whisk together soy sauce, pineapple juice, brown sugar, garlic, ginger, olive oil, salt, and pepper.
  3. Add chicken to marinade, cover, and refrigerate for at least 1 hour or up to 8 hours.
  4. If using wooden skewers, soak them in water for at least 30 minutes.
  5. Chop peppers and onion into similar-sized chunks.
  6. Thread chicken, pineapple, and vegetables onto skewers, alternating ingredients.
  7. Preheat grill to medium-high heat and lightly oil grates.
  8. Grill kebabs for 10–12 minutes, turning occasionally, until chicken is cooked through and lightly charred.
  9. Remove from grill and let rest for a few minutes before serving.

  • Add zucchini, mushrooms, or cherry tomatoes for more variety.
  • Mix in sriracha or red pepper flakes to the marinade for a spicy kick.
