Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 4 slices fresh mozzarella cheese
  • 2 ripe tomatoes, sliced or chopped
  • Fresh basil leaves
  • Balsamic glaze (store-bought or homemade)

Instructions

  1. In a small bowl, whisk together olive oil, garlic, lemon juice, Italian seasoning, salt, and pepper.
  2. Place chicken in a shallow dish or bag and pour marinade over it. Marinate in the refrigerator for at least 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Grill chicken for 5–6 minutes per side or until internal temperature reaches 165°F (74°C).
  5. During the last minute of grilling, top each chicken breast with a slice of mozzarella. Close grill lid to melt.
  6. Transfer chicken to a serving plate and top with tomatoes and fresh basil leaves.
  7. Drizzle generously with balsamic glaze and serve immediately.
