Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
  • 1/4 cup fresh lemon juice
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

  • For the Tzatziki Sauce:
  • 1 cup Greek yogurt
  • 1/2 cucumber (grated and drained)
  • 1 clove garlic (minced)
  • 1 tbsp fresh dill (chopped)
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a bowl, combine lemon juice, olive oil, minced garlic, oregano, salt, and pepper to make the marinade.
  2. Toss the chicken in the marinade, cover, and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
  3. While the chicken marinates, prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber (squeezed to remove excess water), garlic, dill, lemon juice, olive oil, salt, and pepper in a bowl. Chill until ready to serve.
  4. Thread the marinated chicken onto skewers, leaving a little space between pieces for even cooking.
  5. Preheat the grill or grill pan to medium-high heat and cook the skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving with the chilled tzatziki sauce.
