Ingredients

  • 4 large golden potatoes, peeled and thinly sliced
  • 2 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper to taste
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9-inch round cake pan or tart pan.
  2. Mix olive oil, balsamic vinegar, minced garlic, thyme, salt, and pepper in a small bowl.
  3. Layer sliced potatoes in the prepared pan, slightly overlapping each slice. Brush each layer with the balsamic mixture evenly. Repeat until all potatoes are used.
  4. If using Parmesan, sprinkle evenly over the top layer.
  5. Cover pan with foil and bake for 40 minutes. Remove foil and bake an additional 20-25 minutes until potatoes are tender and golden brown on top.
  6. Let torte cool for 10 minutes before slicing and serving.

Notes

  • Add thin slices of red onion or roasted garlic for extra depth.
  • Substitute balsamic vinegar with sherry vinegar for different tang.
  • Mix fresh rosemary or sage with thyme for a unique herbal twist.
  • Add a layer of mozzarella or goat cheese before baking for richness.
  • Store leftovers in airtight container in fridge up to 3 days.
  • Reheat gently in oven or toaster oven to keep edges crisp; microwaving works in a pinch.
