Ingredients
1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
2 eggs, beaten
1/2 cup all-purpose flour
1 cup Panko breadcrumbs
1/2 cup grated Parmesan cheese
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
Oil for frying or baking
For the garlic aioli:
1/2 cup mayonnaise
2 cloves garlic, minced or grated
1 tbsp lemon juice
1/4 tsp salt
Optional: 1 tsp Dijon mustard, pinch of black pepper, chopped parsley
Instructions
Set up a breading station with three bowls: one for flour, one for beaten eggs, and one for Panko breadcrumbs mixed with Parmesan, Italian seasoning, garlic powder, salt, and pepper.
Dredge each chicken piece in flour, dip in egg, and coat with the breadcrumb mixture.
For frying: heat oil in a skillet over medium-high heat. Fry chicken in batches for 3–4 minutes per side until golden and cooked through.
For baking: place coated chicken on a greased baking sheet and bake at 425°F (220°C) for 18–20 minutes, flipping halfway through.
To make garlic aioli: mix mayonnaise, garlic, lemon juice, salt, and optional Dijon mustard. Refrigerate for at least 15 minutes.
Serve hot chicken bites with garlic aioli on the side for dipping.

Add cayenne or red pepper flakes to breadcrumb mix for heat.
