Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened

  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk or buttermilk
  • 1/2 cup unsalted butter, softened (for frosting)

  • 23 tbsp heavy cream or milk (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • Food coloring (for hats and decorations)
  • Mini cookies or sugar cones (for hats)
  • Round candies (M&M’s, gumdrops) for noses
  • Shredded coconut or white frosting (for beards)
  • Sprinkles or edible glitter (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. Cream butter and sugar together until fluffy. Add eggs and vanilla; mix well.
  3. Whisk flour, baking powder, and salt in a separate bowl. Add to the wet mixture alternately with milk. Mix until just combined.
  4. Fill cupcake liners 2/3 full. Bake 18–20 minutes or until a toothpick comes out clean. Let cool completely.
  5. Beat butter for frosting until creamy. Gradually mix in powdered sugar, cream, and vanilla until smooth and pipeable. Divide and tint portions with food coloring as needed.
  6. Frost each cupcake with a base layer. Use white frosting or coconut to create a beard. Add a round candy for the nose.
  7. Top with a hat made from an upside-down cookie, mini cone, or piped frosting. Decorate with sprinkles if desired.
