Soft, warmly spiced, and no rolling needed—these gingerbread bars are the easiest way to bring holiday cheer to your dessert table.
2 cups all-purpose flour
1 1/2 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground cloves
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsweetened applesauce
1/3 cup molasses
1/2 cup coconut sugar or brown sugar
1/3 cup coconut oil or butter, melted
1 tsp pure vanilla extract
Optional: 1/2 cup white chocolate chips or chopped pecans for topping
Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
In a large bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
In a separate bowl, mix applesauce, molasses, sugar, melted coconut oil, and vanilla until smooth.
Add wet ingredients to dry and stir until just combined—don’t overmix.
Spread batter evenly into the prepared baking dish. Top with white chocolate chips or pecans, if using.
Bake for 25–28 minutes, or until a toothpick inserted in the center comes out clean.
Let cool completely in the pan before slicing into bars.
