Ingredients

  • 1 1/2 lbs sirloin steak or beef tenderloin, cut into bite-sized cubes

  • 1 tbsp olive oil

  • 34 garlic cloves, minced

  • 2 lbs Russet or Yukon Gold potatoes, peeled and cubed
  • 1/2 cup heavy cream or milk
  • 4 tbsp butter (for mashed potatoes)
  • Salt and pepper, to taste (for mashed potatoes)

Instructions

  1. Peel and cut potatoes into chunks. Boil in salted water for 15–20 minutes until fork-tender.
  2. While potatoes cook, season beef cubes with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Sear beef in batches until a crust forms, about 2–3 minutes per side. Avoid overcrowding.
  4. Remove beef and reduce heat. Add butter to the skillet, stir in garlic, and cook until fragrant (about 30 seconds).
  5. Return beef to skillet and toss to coat in garlic butter. Remove from heat and set aside.
  6. Drain potatoes and mash with butter and cream until smooth. Season with salt and pepper to taste.
  7. Serve garlic butter beef bites over mashed potatoes. Garnish with fresh herbs if desired.
