Ingredients

  • 1 whole chicken (34 pounds) or 4-6 bone-in chicken thighs
  • 4 cloves garlic, smashed
  • 1 lemon, halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme or rosemary
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).

  5. Roast for 1 hour 15 minutes (whole chicken) or 40-45 minutes (thighs), until skin is golden and crispy and internal temperature reaches 165°F (75°C).
