Ingredients

  • 2 lbs stewing beef (chuck or brisket), cut into cubes
  • 2 tbsp oil or ghee
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 cups chopped tomatoes (canned or fresh)
  • 1/2 cup plain yogurt or coconut milk
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • Fresh cilantro for garnish (optional)
  • Spices:
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp paprika
  • 1/2 tsp chili powder (or to taste)
  • 1 tsp curry powder (optional)

Instructions

  1. Heat oil or ghee in a large pot over medium-high heat. Brown the beef in batches and set aside.
  2. Add more oil if needed, and sauté chopped onions until golden and soft.
  3. Stir in garlic and ginger, cooking for about 1 minute until fragrant.
  4. Add all the spices and stir for 30 seconds to toast and release aroma.
  5. Add chopped tomatoes and cook until thickened and deep in color, about 10 minutes.
  6. Return beef to the pot, add water or broth to cover, and bring to a boil.
  7. Reduce heat, cover, and simmer for 1.5 to 2 hours, stirring occasionally, until beef is tender.
  8. Stir in yogurt or coconut milk, season to taste, and simmer uncovered for a few minutes to finish.
  9. Garnish with fresh cilantro if desired and serve with rice or naan.

Notes

  • Add cubed potatoes, peas, or spinach for variety and nutrition.
  • A splash of lime juice or tamarind adds brightness at the end.
  • Use a pressure cooker or Instant Pot to reduce cooking time.
