Ingredients

  • 1 package (about 20 oz) cheese ravioli (fresh or frozen)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes or 3 cups tomato sauce
  • 4 cups vegetable or chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 2 cups spinach or kale (optional)
  • Fresh basil or parsley, chopped (optional, for garnish)
  • Grated Parmesan cheese (for serving)
  • Red pepper flakes (optional, to taste)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion until softened, about 5 minutes.
  2. Add minced garlic and cook for 1 more minute.
  3. Stir in crushed tomatoes, broth, Italian seasoning, salt, and pepper. Bring to a gentle boil.
  4. Add ravioli to the pot and cook according to package instructions (4–6 minutes for fresh, longer if frozen).
  5. In the last 1–2 minutes, stir in spinach or kale until wilted.
  6. Adjust seasoning as needed. Ladle soup into bowls.
  7. Top with grated Parmesan, fresh basil or parsley, and red pepper flakes if desired. Serve hot.

Notes

  • Use frozen ravioli directly from the freezer—just increase cooking time slightly.
  • For a creamy version, stir in a splash of cream or spoonful of ricotta.
  • Add cooked sausage or chicken for more protein.
  • Store leftovers in the fridge and add broth when reheating.
  • Soup can be thickened with tomato paste if desired.
