Ingredients

  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 (15 oz) can crushed tomatoes or tomato sauce
  • 2 cups vegetable or chicken broth
  • 1/2 cup heavy cream
  • 8 oz uncooked pasta (penne, rotini, or your favorite shape)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil or parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté garlic and onion until softened and fragrant, about 3–4 minutes.
  2. Add crushed tomatoes, broth, Italian seasoning, salt, and pepper. Stir to combine.
  3. Add the uncooked pasta to the pot, making sure it is mostly submerged in the liquid.
  4. Bring to a boil, then reduce heat and simmer, stirring occasionally, until the pasta is tender and the sauce has thickened, about 12–15 minutes.
  5. Lower the heat and stir in heavy cream and Parmesan cheese until the sauce is creamy and smooth.
  6. Garnish with fresh basil or parsley, if using, and serve hot.
