Ingredients

  • For the brownies:
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • For the glaze:
  • 3/4 cup powdered sugar
  • 1 1/2 tbsp fresh lemon juice
  • 1/2 tsp lemon zest (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line or grease an 8×8-inch or 9×9-inch baking dish.
  2. In a large bowl, beat together butter and sugar until light and fluffy.
  3. Add eggs, lemon juice, and lemon zest; mix until smooth.
  4. Stir in flour, baking powder, and salt until just combined.
  5. Pour batter into prepared pan and smooth the top.
  6. Bake for 20–25 minutes until edges are lightly golden and a toothpick comes out mostly clean.
  7. While cooling, whisk together powdered sugar and lemon juice (plus zest if using) for glaze.
  8. Spread glaze over cooled brownies and let set before slicing.

Notes

  • Add white chocolate chips for extra sweetness.
  • Top with sliced almonds for crunch.
  • Use more zest or lemon extract for intense lemon flavor.
  • For clean cuts, chill slightly and wipe knife between slices.
  • Double recipe for a 9×13-inch pan; increase bake time as needed.
