This quick, beginner-friendly recipe combines ground beef, melted cheese, and tangy burger sauce in a crispy quesadilla — perfect for lunch or dinner in just 15 minutes.
For the Quesadilla Filling:
2 medium flour tortillas
½ lb ground beef
½ tsp salt
½ tsp pepper
½ tsp paprika
½ tsp garlic powder
½ tsp onion powder
1 cup shredded cheese (cheddar or Mexican blend)
Chopped pickles (optional)
Chopped tomatoes (optional)
For the Burger Sauce:
2½ tbsp mayonnaise
1½ tbsp ketchup
1 tsp pickle juice
½ tbsp pickles, chopped
¼ tsp ground black pepper
¼ tsp paprika
Make the Burger Sauce:
In a small bowl, combine mayonnaise, ketchup, pickle juice, chopped pickles, pepper, and paprika. Mix until smooth. Set aside.
Cook the Ground Beef:
Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up as it browns.
Season with salt, pepper, paprika, garlic powder, and onion powder.
Once cooked through, remove from heat and optionally drain excess grease.
Assemble the Quesadillas:
Lay tortillas flat and spread a layer of burger sauce on one half.
Add a layer of shredded cheese, followed by cooked beef, and optional chopped pickles or tomatoes.
Fold the tortilla over to form a half-moon shape.
Cook the Quesadillas:
Wipe out the skillet and return to medium heat.
Cook each quesadilla 2–3 minutes per side or until golden and crispy, and cheese is fully melted.
Serve:
Slice quesadillas into wedges and serve with extra burger sauce for dipping. Enjoy!
