The Best garlic butter beef cheeseburger rollups with juicy seasoned beef, gooey melted cheese, and golden buttery tortillas. This easy baked recipe is perfect for weeknight dinners, game day snacks, or crowd-pleasing appetizers.
1 lb ground beef
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1 tablespoon olive oil
4 large flour tortillas
1/4 cup butter, melted
3 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
Salt and black pepper, to taste
Optional: sliced pickles for garnish
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.
Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook for 7–8 minutes, breaking it apart with a spatula until browned.
Stir in Worcestershire sauce, onion powder, garlic powder, smoked paprika, salt, and black pepper. Mix well and remove from heat. Allow the beef mixture to cool slightly.
In a small bowl, combine the melted butter with minced garlic to make the garlic butter.
Lay the flour tortillas flat on a clean surface. Evenly spread the cooked beef mixture across each tortilla.
Sprinkle cheddar and mozzarella cheese evenly over the beef.
Roll each tortilla tightly, tucking in the sides to secure the filling. Place them seam-side down on the prepared baking sheet.
Brush the tops generously with garlic butter.
Bake for 12–15 minutes until the rollups are golden brown and the cheese inside is melted and bubbly.
Let them cool slightly, then slice into pinwheels if desired. Garnish with sliced pickles and serve warm.
Use ground chuck (80/20) for juicy and flavorful rollups.
Try different cheeses such as Monterey Jack, Gruyère, or pepper jack for extra flavor.
Add diced onions, jalapeños, or crispy bacon for more cheeseburger-style toppings.
Serve with ketchup, mustard, ranch, or burger sauce for dipping.
These rollups make a great party appetizer, snack, or quick weeknight dinner.
