Ingredients

  • 2 cups cauliflower florets
  • 2 cups broccoli florets
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups milk
  • 1 clove garlic, minced (optional)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Dijon mustard (optional)
  • Salt and pepper to taste
  • 1/3 cup breadcrumbs or crushed crackers for topping

Instructions

  1. Preheat oven to 375°F (190°C) and grease a medium baking dish.
  2. Steam or blanch broccoli and cauliflower for 3–4 minutes until just tender. Drain and set aside.
  3. In a saucepan, melt butter over medium heat. Add flour and whisk for 1–2 minutes to form a roux.
  4. Slowly whisk in milk, stirring until thickened. Stir in garlic, Dijon mustard, salt, and pepper.
  5. Add cheddar and Parmesan cheeses, stirring until melted and smooth.
  6. Fold the veggies into the sauce and pour into the baking dish.
  7. Top with breadcrumbs or more cheese and bake for 20–25 minutes until bubbly and golden.
  8. Let cool slightly before serving.
