Ingredients

1 lb beef sirloin or stew meat, cut into 1″ strips

8 oz wide egg noodles

2 cups low-sodium beef broth

1 medium onion, chopped

2 cloves garlic, minced

2 tbsp olive oil or butter

2 tbsp all-purpose flour

1 tbsp Worcestershire sauce

Salt & black pepper, to taste

2 tbsp chopped fresh parsley (optional garnish)

Instructions

Heat oil or butter in a large skillet or Dutch oven over medium-high heat.

Season beef with salt and pepper. Sear in batches for 2–3 minutes per side until browned. Set aside.

In the same pan, sauté onions for 2–3 minutes until soft. Add garlic and cook for 30 seconds.

Sprinkle flour over the mixture and stir for 1 minute to form a roux.

Gradually whisk in beef broth and Worcestershire sauce, scraping up any brown bits.

Return beef (and juices) to the pan. Cover and simmer for 20–25 minutes, stirring occasionally, until the beef is tender and sauce thickens.

Meanwhile, cook egg noodles according to package instructions; drain well.

Stir cooked noodles into the beef mixture and toss to coat.

Adjust seasoning with salt and pepper to taste.

Serve hot, garnished with fresh parsley and a sprinkle of black pepper if desired.
