Ingredients

  • 3 large russet potatoes, scrubbed and cut into wedges
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/3 cup grated Parmesan cheese
  • 1 tsp Italian seasoning

  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Cut scrubbed potatoes into even wedges (about 8 per potato).
  3. In a large bowl, toss potato wedges with olive oil, garlic, Parmesan, Italian seasoning, paprika, salt, and pepper until coated.
  4. Spread wedges in a single layer on baking sheet, cut sides down for optimal browning.
  5. Bake for 35–40 minutes, flipping halfway through, until crispy and golden brown.
  6. Sprinkle with additional Parmesan and chopped parsley, if desired, and serve hot with dipping sauce.
