Ingredients

  • 2 tbsp red Thai curry paste
  • 1 can (13.5 oz) full-fat coconut milk
  • 3 cups chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 small yellow onion, chopped
  • 2 carrots, sliced
  • 2 cups baby spinach or chopped bok choy
  • 1 tbsp fish sauce or soy sauce
  • 1 tbsp fresh lime juice
  • 1 tbsp olive oil or coconut oil
  • Fresh cilantro or Thai basil, for garnish
  • Sliced chili or red pepper flakes (optional)

Instructions

  1. Heat oil in a large pot over medium heat. Sauté onion, garlic, and ginger for 3–4 minutes until soft and fragrant.
  2. Stir in red curry paste and cook for 1 minute.
  3. Add broth and coconut milk. Bring to a gentle simmer.
  4. Add sliced carrots and cook for 5 minutes.
  5. Drop in frozen dumplings and simmer according to package instructions, typically 6–8 minutes.
  6. Stir in fish sauce or soy sauce and lime juice.
  7. Add spinach or bok choy and cook until wilted.
  8. Adjust seasoning to taste and serve hot, garnished with herbs and optional chili.
