Ingredients

  • 1 lb ground beef
  • 3 cups cooked long grain white rice
  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 1/2 cup chicken or beef broth
  • 1 tbsp olive oil or butter
  • 2 tbsp chopped green onions or parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  2. Add onion, bell pepper, and celery. Sauté for 5–7 minutes until softened.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add Cajun seasoning, paprika, thyme, salt, and pepper. Stir to combine.
  5. Pour in broth and bring to a simmer.
  6. Stir in cooked rice and cook for 5–7 minutes until heated through and liquid is mostly absorbed.
  7. Taste and adjust seasonings. Garnish with green onions or parsley if desired.
