Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1 cup buttermilk (or milk + vinegar)
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/2 cup chopped dill pickles
  • 1 cup grated cheddar cheese
  • 2 tbsp fresh dill, chopped
  • 2 tbsp pickle juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5″ loaf pan.
  2. In a bowl, whisk flour, baking powder, baking soda, salt, and garlic powder.
  3. In another bowl, combine buttermilk, eggs, melted butter, and pickle juice.
  4. Stir wet ingredients into dry until just combined.
  5. Fold in chopped pickles, cheddar cheese, and fresh dill.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake 45–55 minutes, or until a toothpick comes out clean.
  8. Cool in pan 10 minutes, then transfer to rack to cool completely before slicing.

Notes

  • Add cayenne or jalapeños for spice.
  • Mix in bacon for a smoky twist.
  • Swap cheddar for mozzarella or use half whole wheat flour.
  • Sprinkle sesame or everything bagel seasoning on top before baking.
