Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

  • 3 tbsp butter
  • 3 cloves garlic, minced

  • 12 oz pasta (fettuccine, linguine, or penne)

  • 1 cup heavy cream
  • 1/2 cup chicken broth or reserved pasta water
  • 3/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: crushed red pepper flakes or lemon zest

Instructions

  1. Season chicken pieces with garlic powder, paprika, salt, and pepper.
  2. In a large skillet, heat olive oil and cook chicken until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant. Return chicken to the skillet and toss to coat in garlic butter. Keep warm.
  4. Cook pasta according to package instructions. Drain and reserve some pasta water if not using chicken broth.
  5. In a separate saucepan or wiped skillet, melt butter, add garlic, then pour in cream and chicken broth or reserved pasta water. Simmer gently.
  6. Stir in Parmesan cheese until melted and smooth. Season with salt, pepper, and optional red pepper flakes or lemon zest.
  7. Toss cooked pasta in the sauce until evenly coated.
  8. Serve pasta topped with garlic butter chicken bites. Garnish with fresh parsley and serve warm.
