Ingredients

1 pound ground beef

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1/2 cup French onion soup

1/4 cup chopped fresh parsley

1 egg

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

4 slices Swiss cheese

Instructions

In a large bowl, combine ground beef, breadcrumbs, Parmesan, French onion soup, parsley, egg, garlic powder, salt, and pepper.

Mix until just combined—do not overwork the mixture.

Shape into a loaf and place in the crockpot.

Cook on low for 6–7 hours or high for 3–4 hours, until the internal temperature reaches 160°F.

About 10 minutes before serving, top with Swiss cheese, cover, and allow to melt.

Carefully remove the meatloaf and let it rest before slicing.

Notes

For a lighter version, substitute ground turkey or chicken.

Add caramelized onions or Worcestershire sauce for extra flavor.

Mozzarella or provolone can be used instead of Swiss cheese.
