Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 can (10.5 oz) cream of chicken soup
  • 8 oz cream cheese, softened
  • 1 packet Italian dressing seasoning mix (dry)
  • 1 cup chicken broth
  • 2 tbsp butter
  • 1/2 onion, finely chopped (optional)
  • 2 cloves garlic, minced (optional)
  • 12 oz angel hair pasta
  • Salt and black pepper, to taste
  • Fresh parsley or grated Parmesan, for garnish (optional)

Instructions

  1. Place chicken in the bottom of the crockpot and season lightly with salt and pepper.
  2. In a saucepan over low heat, melt butter and stir in cream cheese, cream of chicken soup, chicken broth, and Italian dressing mix until smooth.
  3. Pour the sauce over the chicken in the crockpot. Cover and cook on low for 4–5 hours or on high for 2–3 hours, until chicken is tender and fully cooked.
  4. About 20 minutes before serving, cook angel hair pasta according to package directions. Drain and set aside.
  5. Shred or slice the cooked chicken in the crockpot and stir it into the sauce.
  6. Serve the creamy chicken mixture over hot angel hair pasta. Garnish with fresh parsley or Parmesan if desired.
