Ingredients

  • 1 1/2 pounds chicken tenders or chicken breast strips
  • 1/2 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup whole wheat breadcrumbs or panko
  • 2 tablespoons olive oil

Instructions

  1. In a bowl, combine Greek yogurt, garlic, lemon juice, lemon zest, oregano, paprika, salt, and pepper. Add chicken tenders and toss to coat. Marinate at least 30 minutes or up to 2 hours in refrigerator.
  2. Preheat oven to 400°F (200°C). Line baking sheet with parchment paper and lightly grease with olive oil.
  3. Spread breadcrumbs on shallow plate. Remove chicken from marinade, letting excess drip off, then coat thoroughly in breadcrumbs.
  4. Place coated tenders on prepared baking sheet in single layer. Drizzle or spray lightly with olive oil.
  5. Bake 15-20 minutes, flipping halfway, until cooked through and coating is golden and crispy.
  6. Serve warm with tzatziki sauce, lemon wedges, or favorite salad.

Notes

  • Add cumin or smoked paprika for deeper flavor.
  • Use almond flour instead of breadcrumbs for low-carb, gluten-free version.
  • For extra crispiness, pan sear tenders briefly after baking.
  • Serve in pita with fresh veggies for a tasty wrap.
  • Store leftovers in airtight container in fridge up to 3 days.
  • Reheat in oven or air fryer to keep crispiness; microwave if needed.
