Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1/2 cup flour (for dredging)
  • 2 eggs, beaten
  • 1 cup Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Olive oil or cooking spray (for baking or frying)
  • 2 cups chopped romaine lettuce
  • 1/2 cup Caesar dressing (store-bought or homemade)
  • 4 brioche or sandwich buns
  • Optional: sliced tomatoes
  • Optional: pickled onions
  • Optional: extra shaved Parmesan

Instructions

  1. Pound chicken to even thickness and season with salt, pepper, and garlic powder.
  2. Set up a breading station with flour, beaten eggs, and a mix of Panko breadcrumbs and Parmesan cheese.
  3. Dredge chicken in flour, dip in eggs, and coat in the breadcrumb-Parmesan mixture.
  4. Bake at 425°F for 20–25 minutes (or air fry/fry) until golden and crispy, flipping halfway through.
  5. While chicken cooks, toast buns and toss chopped romaine with Caesar dressing.
  6. Build the sandwich: place Caesar-dressed lettuce on bottom bun, add crispy chicken, top with more Parmesan and optional extras.
  7. Top with the other half of the bun and serve immediately.
