Ingredients

  • 68 ripe tomatoes, halved or quartered
  • 2 whole garlic bulbs, tops trimmed
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 medium onion, roughly chopped
  • 1 carrot, diced (optional, for sweetness)
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream or half-and-half
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 200 °C (400 °F). Drizzle tomatoes and garlic bulbs with olive oil, season with salt and pepper, and roast on a baking sheet for 25–30 minutes, until tender and caramelized.
  2. Meanwhile, heat a pot over medium heat with a drizzle of olive oil. Sauté onion (and carrot, if using) for 4–5 minutes until softened.
  3. Squeeze roasted garlic cloves from their skins into the pot and add roasted tomatoes.
  4. Pour in broth to cover the vegetables and bring to a simmer for a few minutes to meld flavors.
  5. Remove from heat and blend until smooth using an immersion blender, or transfer in batches to a countertop blender.
  6. Return soup to low heat, stir in cream, and warm gently for 2–3 minutes. Taste and adjust seasoning with salt, pepper, or a pinch of sugar if needed.
  7. Ladle into bowls and garnish with a drizzle of cream and fresh basil or parsley.
