Ingredients

  • 12 oz rigatoni pasta
  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil or butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup Parmesan cheese, freshly grated
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: crushed red pepper flakes, 2 cups spinach, 1 cup sliced mushrooms

Instructions

  1. Cook rigatoni in salted boiling water until al dente. Drain and set aside.
  2. Season chicken with salt, pepper, and Italian seasoning. In a large skillet, heat olive oil and cook chicken until golden and fully cooked. Remove and slice.
  3. In the same skillet, sauté garlic for 1 minute until fragrant.
  4. Add chicken broth and heavy cream. Stir and bring to a simmer.
  5. Stir in Parmesan cheese and cook 4–5 minutes until thickened.
  6. Return sliced chicken to skillet. Add rigatoni and stir to coat in sauce.
  7. Adjust seasoning with salt, pepper, and red pepper flakes, if using.
  8. Garnish with parsley and serve hot with extra Parmesan.
