Ingredients

  • 1 cucumber, thinly sliced
  • 8 slices white or whole wheat sandwich bread, crusts removed
  • 8 oz cream cheese, softened
  • 2 tablespoons mayonnaise

  • 1 tablespoon fresh chives, chopped

Instructions

  2. Spread a generous layer of the cream cheese mixture evenly over each slice of bread.
  3. Arrange cucumber slices evenly over half of the bread slices.
  4. Top with remaining bread slices, cream cheese side down, to form sandwiches.
  5. Gently press sandwiches together and cut each into 4 small triangles or fingers.
  6. Chill in refrigerator at least 30 minutes before serving to let flavors meld.
