Ingredients

  • 8 oz spaghetti
  • 1 lb boneless, skinless chicken breasts or thighs
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt and pepper to taste
  • 1/4 tsp red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken with Cajun seasoning on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and let rest before slicing.
  3. Reduce heat to medium and add garlic to the same skillet. Sauté for 1 minute until fragrant.
  4. Add chicken broth and heavy cream, scraping up any browned bits from the pan.
  5. Stir in mozzarella and Parmesan cheese until melted and smooth. Add red pepper flakes if desired. Simmer gently.
  6. Meanwhile, cook spaghetti in salted water until al dente. Drain and add to the sauce.
  7. Toss pasta in the sauce to coat. Slice chicken and place on top. Spoon extra sauce over the chicken.
  8. Garnish with chopped parsley and serve hot.
