Ingredients

  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tbsp BBQ seasoning or rub
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar or pepper jack cheese
  • 2 green onions, chopped
  • BBQ sauce, for dipping
  • Ranch or chipotle aioli (optional)

Instructions

  1. Preheat oven to 400°F (200°C) or heat a skillet over medium-high heat.
  2. Toss chicken pieces with olive oil, BBQ seasoning, garlic powder, onion powder, paprika, salt, and pepper.
  3. Spread on a lined baking sheet and bake for 18–20 minutes, or cook in skillet until golden and cooked through.
  4. Transfer cooked chicken to a baking dish or leave on the pan. Sprinkle with cheese and crumbled bacon.
  5. Return to the oven for 2–3 minutes to melt cheese.
  6. Top with chopped green onions. Serve hot with BBQ sauce or ranch on the side.
