Ingredients

For the Meatloaf:

pounds ground beef

1 cup breadcrumbs

½ cup milk

1 egg

1 small onion, finely chopped

2 cloves garlic, minced

⅓ cup ketchup

2 tablespoons Worcestershire sauce

1 teaspoon salt

½ teaspoon black pepper

For the Glaze:

½ cup ketchup

2 tablespoons brown sugar

1 tablespoon mustard

For the Cheesy Garlic Bread:

1 loaf French bread, sliced in half lengthwise

½ cup butter, softened

3 cloves garlic, minced

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

2 tablespoons chopped parsley

Instructions

Preheat oven to 375°F (190°C).

Mix the meatloaf: In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper. Mix just until combined.

Shape and glaze: Form into a loaf and place in a baking dish. In a small bowl, mix ketchup, brown sugar, and mustard for the glaze. Spread evenly over the top of the loaf.

Bake for 50–55 minutes, until cooked through and the glaze is set.

Make the garlic bread: While the meatloaf is baking, mix butter and minced garlic. Spread over the cut sides of the French bread. Top with mozzarella and Parmesan.

Bake garlic bread: During the last 10–12 minutes of meatloaf baking time, place bread in the oven until the cheese is melted and golden.

Finish with chopped parsley before slicing and serving.

Notes

Use a beef/pork mix for added juiciness.

Add BBQ sauce to the glaze for extra flavor.

Try provolone or red pepper flakes on the bread for variation.

Don’t overmix the meat to avoid a dense loaf.
