Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil, divided
  • 6 cups mixed salad greens
  • 1 large avocado, diced
  • 1 cup orange segments
  • 1 cup grapefruit segments (optional)
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp fresh cilantro, chopped
  • 1/4 cup fresh orange juice
  • 2 tbsp fresh lemon juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and black pepper, to taste

Instructions

  1. Season shrimp with salt and pepper.
  2. Heat 1 tbsp olive oil in a skillet over medium heat. Sauté shrimp until pink and opaque, about 2–3 minutes per side. Remove from heat.
  3. In a large bowl, arrange salad greens, avocado, orange segments, grapefruit segments, red onion, and cilantro.
  4. In a small bowl, whisk together orange juice, lemon juice, honey, Dijon mustard, and remaining olive oil. Season with salt and pepper.
  5. Add cooked shrimp to the salad, drizzle with citrus dressing, and toss gently to combine.
  6. Serve immediately.
