Ingredients

  • For the filling:
  • 4 oz cream cheese (softened)
  • 1/4 cup powdered sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • For the roll-ups:
  • 8 slices white sandwich bread (crusts removed)
  • 2 large eggs
  • 1/4 cup milk
  • Butter (for frying)
  • For the coating:
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 2 tbsp melted butter (for brushing or dipping)

Instructions

  1. Mix the cream cheese, powdered sugar, cinnamon, and vanilla extract until smooth to make the filling.
  2. Flatten the bread slices with a rolling pin, then spread a spoonful of filling along one end of each slice.
  3. Roll up each slice tightly and gently seal the seam.
  4. In a shallow bowl, whisk the eggs and milk together to make the custard.
  5. Dip each roll-up into the egg mixture, coating all sides.
  6. Heat butter in a skillet over medium heat and cook the roll-ups until golden brown on all sides, turning gently.
  7. While warm, brush or roll the cooked roll-ups in melted butter, then toss them in the cinnamon sugar to coat.
  8. Serve warm with maple syrup or extra cream cheese drizzle, if desired.

Notes

  • Add mini chocolate chips or swap in Nutella for a chocolate-cinnamon combo.
  • Use whole wheat bread for a slightly healthier version.
  • Add a splash of maple syrup to the egg custard for extra depth of flavor.
  • Store leftovers in the fridge for up to 2 days and reheat in a toaster oven or skillet to maintain crispiness.
  • These are kid-friendly and can be served with fruit or yogurt for a fuller breakfast.
