Ingredients

  • 4 cups brioche or challah bread, cut into 1-inch cubes
  • 3 large eggs
  • 1/2 cup milk or cream
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon ground nutmeg (optional)
  • 2 tablespoons unsalted butter (for cooking)
  • 2 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 12 tablespoons milk or cream (to thin glaze)

Instructions

  1. In a bowl, whisk together eggs, milk, sugar, cinnamon, vanilla, and nutmeg until smooth.
  2. Dip bread cubes into the custard and let soak briefly until slightly puffed.
  3. Heat butter in a skillet over medium heat. Add soaked cubes in batches and cook, turning occasionally, until golden brown and crisp on all sides.
  4. In a small bowl, whisk together softened cream cheese, powdered sugar, and enough milk to form a smooth, pourable glaze.
  5. Transfer French toast bites to a serving platter and drizzle with cream cheese glaze. Serve warm.

Notes

  • Use day-old bread for best texture and custard absorption.
  • Swap cream cheese glaze with maple syrup or vanilla glaze for variation.
  • Add diced sautéed apples or nuts for extra flavor and texture.
  • To bake: arrange soaked cubes on a greased baking sheet and bake at 375 °F for 12–15 minutes, tossing once.
  • Store leftovers in fridge and reheat in oven or air fryer for best texture.
