Ingredients

  • 1 cup cottage cheese
  • 2 eggs
  • 1 cup rolled oats or oat flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 apple, peeled and finely diced
  • 1 tsp vanilla extract
  • 12 tbsp maple syrup or honey (optional)
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease or line a mini muffin tin.
  2. In a mixing bowl or blender, combine cottage cheese, eggs, oats/oat flour, baking powder, cinnamon, vanilla, sweetener (if using), and salt. Blend or mix until smooth.
  3. Fold in the diced apple by hand.
  4. Spoon the mixture into mini muffin cups, filling each about 3/4 full.
  5. Bake for 18–22 minutes until set and lightly golden.
  6. Cool in the tin for a few minutes, then transfer to a wire rack to finish cooling.
